Taco Pot Pies!

Yes I know, I've been gone for a few months.  Just haven't felt the motivation to post things.  Anyways :)  Last post I went through the FaceBook Muffin Tin Chicken Pot Pie Recipie that Maly and I made for our Friday get-to-gether. The following weekend we made Taco Muffin Tin Pot Pies!!  They were AWESOME!!  We used the same recipe for the Chicken pot pies, but swapped the chicken for beef and used taco seasoning.

The typical ingredients (Damn banana's snuck in again)

Bisquick mix :)

the ground beef mixed with frozen peas and carrots, and chopped onion


Beef mix in the pan with cheese added for numminess!

Ok  a few of them broke apart before hitting the plate (needed more Bisquick mix and less beef mix), Maly had a great idea to just wrap those in a Flour tortilla which was REALLY good!!

FaceBook Muffin Tin Chicken Pot Pie

OK  Next Recipe!  Maly wanted to try this one out, and as for me I'll try any new recipe as long as it's not onion heavy!  So With that She mentioned this one I posted on her Facebook page some time ago from "Appealing Meals With Amy"  Here I'll attach the Screen Shot! So With this screen shot on my Ipad, and a call to Maly to make sure we had everything, I headed over to start the cooking adventure!  I say adventure because I never know what kinda traffic hic-up I might encounter!  Also, I usually stop at Sonic for a Cherry Vanilla Coke Zero.  I didn't this time, but I should of!

So Starting off this meal we gathered the Culprits in our cooking Experiment! See picture below, and ignore the Mr Coffee, usually it's the banana's that get the cameo, but unfortunately they were unavailable. Mr Coffee Gladly stepped in. 


So With everything Gathered, Maly thawed the Chicken in a small frying pan with some oil and seasonings, As for me I mixed up the Bisquick Mix!


As Instructed I put less than a tablespoon in each greased muffin cup to start with.


Then I mixed together the other ingredients (without the chicken since it was still cooking) I put a 1/4 cup in each muffin cup and when the chicken was done I plopped two or three cubes on top. I will say the Veggie mix wasn't enough for all the muffin cups so I just pulled out the frozen veggies (except onions, I was curious if it effected the taste) and added 1/4 cup to each muffin cup and sprinkled the salt, pepper, and garlic on them and added the chicken on top.



The Bottom 4 are sans onions.

So filling in the rest of the space with the Bisquick mix we were set to go!


The instructions said bake for 25-30, so we set the timer at 25 and then since they didn't look quite done, I got the bright idea and sprinkled cheese on top as an added touch and put them back in for the last 5 minutes. 


What we got was a rather yummy meal served with a Side Salad. The Next time we do this, It's going to be with ground beef and taco seasonings!  I'll let you know how that comes out!!

Fun at Sci-port and The Duck POnd

So Saturday Maly and I went to Sci-port with her Nephew, Jonas.  He's 5 so there was very little that kept his attention for to long.  Although there is a playhouse on the 2nd level that he found fascinating for some reason.  I wasn't sure if we could take pictures, so I opted not to just in case.  We had lunch at "Counter Culture"  right there in Sci-port.

After our nice lunch we headed out to meet my My Bestest friend Melissa, her husband Joe, Their adopted boys and the two boys her mom Adopted.   We had fun watching the boys play and interact.  Since Maly gets Jonas on some weekends he might like having a playtime with boys close to his age.  They played on some trees, and on a pirate ship, and played some tag football.  They were all having fun.  We also got to see a few types of ducks, a crane, and far off were some type of geese.

Hope everyone had a great weekend, I know I did :)  Enjoy the few pics!

A Sight to See

This past Saturday I headed out to grab some Indian food to go from my favorite place, Indigo.  As I was backing out of my parking space and moving to the exit, I saw a yard long ribbon fluttering across the drive.  Then I saw the Mockingbird fluttering into the tree by the exit that was holding on to this Ribbon.  It's not something you see every day in the city. So somewhere I’m sure there is a yard long white ribbon woven nicely into a momma Mockingbird's nest.

You know, come to think of it, my whole weekend was centered around Mockingbirds (I'm sure it has nothing to do with having several living in the trees where I work.)  Yesterday (Sunday) when I got off for work I saw a black bird being hounded by two Mockingbirds. Then when  I opened my car door and tossed in my purse I saw a grey little bird chirping and then hop under my car.  It was a baby Mockingbird of course, and momma wasn't too far away chirping back from a sign post.  Making sure the baby was well away from my car, I waited before leaving to watch it. As it was learning to fly by jumping off a curb, Trying to get back to its momma. I can only guess that's why the blackbirds where being hounded.  Babies and eggs were abound and they were protecting them.

Sadly I got absolutely nothing for pictures of all this.  So instead I'll leave the picture I took at a friends several years ago of a baby Mockingbird that was hiding in her cedar tree.

Pizza Balls: The 2nd Roll

Corny title aside :)   My friend "Maly"  and I made another attempt at the infamous Pintrest/Facebook  Pizza Balls.   We nailed it!!!!  (As an after thought, Maybe I should call these Pizza Muffins)

I apologize now.  I forgot to take pics of some of the steps.  So Sorry, I was just rather hungry and eager to make them!! :)

OK Again,  Counter of ingrediants (Damn banana's Got in the picture again!!)




Again I forgot to show it, but i Peeled apart the layered Grands Buicuits so i'd have two thinner peices to work with.   WE sprinkled Italian seasonings and garlic on them and rolled them flat adding 2-3 peices of pepperoni, spoonful of Ragu spaghetti Sauce and a thicuk slice of cheese.


Placed in the muffin Tin after coating it with Sprayable Pam Cooking Oil. Sprinkled the tops with the grated Parmesan cheese and garlic powder



Baked for 15 minutes I think.  We pulled them out when they were golden brown.  Only one cheesy explosion occurred this time :)



Set them out to cool a moment and to take a quick snapshot!


Served them with a small Side salad :)


I need to point out, the secret to this success was the supervisor we had watching us the Whole time to ensure we didn't burn any thing.  Her name is Buttons

A Delicious Dessert


So many Thanks to my Dearest friend Lynn for this wonderful simple Recipe.  ( I like simple)  If i'm telling this right her Grandmother use to make this but with a lot more butter than we did, but I can only imagine how rich and yummy it was.
Whatcha Need:

1 Can Crushed Pineapple (Drained)
1 Can Cherry Pie Filling (Low fat if you wannabe healthy)
1 Box Jiffy Yellow cake mix
I think we used ½ cup of butter (Melted), give or take (we Used Land o Lakes Light Butter)
  *Just as a thought, i found a similar recipe that used Sprite/7-up/Sierra Mist instead of butter.  
We are going to try that one too eventually!


Starting off dump Crushed pineapples (be sure they are drained) into 9x9 baking dish spread out to the edges:



Next dump out Cherry Pie filling and spread out to the edges:



Next shake cake mix all over till mostly evenly spread over other two layers.
Finally drizzle melted butter over top (not perfectly) :




Baking was a hit or miss really, we started at 325 degrees then bumped it up to 350 to get the top nice and brown.  It took approximately 25 -30 minutes.   So if you decide to make this check on it after 20 minutes till the is a golden brown color (A little darker if you want it a bit crispy).



An Afterthought scoop of vanilla Ice Cream would have been great with this but, we didn’t think about it at the time.

Ipsy Bag came in today!!!


I got my Ipsy.com Bag today!!  HORRAY!!  Pretty in Pink is the name of this month’s bag, and it came with some very nice stuff!


This month inside the cute white and pink trimmed zipper make-up bag I received Blush from Be a Bombshell called “Beach Please.”  It’s a very bright Pink blush, don’t know if I’d ever where it but it is a pretty pink color!   Next up I received eye shadow from Two Cosmetics called “Heartache Duo Eye Shadow”  two shades of pink in a small container.  Also received was small travel bottle of “Healthy Sexy Hair” by SexyHair A renewal lotion for your hair with Argon oil!  Can’t wait to try this out after my shower this evening! Lastly in this cute little bag I got Nail Polish from Sation A very pretty (you guessed it)  Light Pink color called “Love at First Byte”




Sorry my photos aren’t that great, my lighting in my room is horrid,  but still wanted to share for those of my friends that haven’t looked into an Ipsy bag yet. (what are you waiting for!?)  I’m not a Pink person, but $10 for all this!!  This was Amazing!!!
